- Salt and pepper to taste

For the Spicy Peanut Sauce:

- 1/2 cup creamy peanut butter

- 2 tablespoons soy sauce

- 1 tablespoon lime juice

- 1 tablespoon honey

- 1 teaspoon grated ginger

- 1 clove garlic, minced

- 1-2 teaspoons Sriracha or to taste

- 2-4 tablespoons warm water, to thin

For the Pickled Vegetables:

- 1/2 cup rice vinegar

- 1 tablespoon sugar

- 1 teaspoon salt

- 1 cup julienned carrots

- 1 cup julienned cucumbers

Additional:

- 4 brioche buns, toasted

- Fresh cilantro leaves for garnish

Instructions:

1. Prepare the Patties:

   - In a bowl, combine ground meat with lemongrass, kaffir lime leaves, salt, and pepper. Mix well and form into 4 equal-sized patties.

   - Grill or pan-fry the patties over medium heat to your desired doneness.

2. Make the Spicy Peanut Sauce:

   - In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, grated ginger, garlic, and Sriracha. Gradually add warm water until the sauce reaches a drizzle-able consistency.

3. Pickle the Vegetables:

   - In a small saucepan, heat rice vinegar, sugar, and salt until the sugar dissolves. Pour over the julienned carrots and cucumbers in a bowl. Let sit for at least 15 minutes, then drain.

4. Assemble the Burgers:

   - Spread a generous amount of spicy peanut sauce on the bottom half of each toasted brioche bun.

   - Place a cooked patty on the sauce, top with a heap of pickled vegetables, and garnish with fresh cilantro leaves.

   - Cap with the top half of the bun.
