Ingredients:

1 1/2 pounds Brussels sprouts, trimmed and halved

2 tablespoons olive oil

Salt and freshly ground black pepper

1/2 cup beer cheese spread (see recipe note below)

2 tablespoons beer (preferably a lighter ale or lager)

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup (optional, for added sweetness)

1/4 cup grated Parmesan cheese (optional, for topping)

Note: For a quick beer cheese spread, combine 1/2 cup softened cream cheese, 1/2 cup grated sharp cheddar cheese, 2 tablespoons of your preferred beer, a pinch of garlic powder, and a dash of mustard until smooth and well mixed.

Instructions:

Prepare and Roast Brussels Sprouts:

Preheat Oven:

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Season and Roast:

Toss the Brussels sprouts with olive oil, salt, and pepper. Spread them out in a single layer on the prepared baking sheet, cut side down.

Roast in the preheated oven for 20-25 minutes, or until they are tender and the edges start to caramelize and turn crispy.

Prepare Beer Cheese Glaze:

Mix Glaze Ingredients:

While the Brussels sprouts are roasting, in a small bowl, whisk together the beer cheese spread, beer, Dijon mustard, and honey or maple syrup until smooth.

Glaze and Finish Roasting:

Glaze Sprouts:

Remove the Brussels sprouts from the oven and drizzle the beer cheese glaze over them, tossing gently to ensure they are evenly coated.

Roast Again:

Return the Brussels sprouts to the oven and roast for an additional 5-10 minutes, or until the glaze is bubbly and the sprouts are well caramelized.

Optional Parmesan Topping:

If using, sprinkle grated Parmesan cheese over the sprouts during the last few minutes of roasting for a crispy, cheesy finish.

Serve the Roasted Beer Cheese Brussels Sprouts warm, straight from the oven.
