Ingredients:

For the Beer Cheese Dip:

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup milk

1/2 cup beer (a lager or ale works well)

2 cups sharp cheddar cheese, grated

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

Salt and pepper to taste

A pinch of cayenne pepper (optional for extra heat)

For the Soft Pretzels:

1 and 1/2 cups warm water (110°F to 115°F)

1 tablespoon sugar

2 teaspoons salt

1 package active dry yeast (2 and 1/4 teaspoons)

4 and 1/2 cups all-purpose flour

4 tablespoons unsalted butter, melted

Vegetable oil, for bowl and baking sheets

10 cups water

2/3 cup baking soda

1 large egg yolk beaten with 1 tablespoon water (for egg wash)

Coarse sea salt, for topping

Instructions:

Prepare the Beer Cheese Dip:

Make a Roux:

Melt butter in a saucepan over medium heat. Stir in flour and cook for 1 minute. Whisk in milk and beer gradually, avoiding lumps.

Add Cheese and Seasonings:

Continue to cook, stirring constantly, until the mixture thickens. Reduce heat to low and add grated cheese, stirring until smooth. Mix in Dijon mustard, garlic powder, salt, pepper, and cayenne pepper. Keep warm.

Make the Soft Pretzels:

Prepare the Dough:

Combine warm water, sugar, and salt in a bowl. Sprinkle yeast on top and let sit for 5 minutes, or until it begins to foam. Add flour and melted butter, mixing until dough comes together. Knead on a floured surface until smooth.

Let Dough Rise:

Place dough in a greased bowl, cover, and let rise in a warm place for about 1 hour, or until doubled in size.

Form Pretzels:

Preheat oven to 450°F (232°C). Divide dough into 8 pieces. Roll each into a 24-inch rope, form into a pretzel shape, and place on a baking sheet.

Boil Pretzels:

Bring 10 cups of water and baking soda to a rolling boil. Boil pretzels in batches for 30 seconds each, then return to the baking sheet.

Bake:

Brush pretzels with egg wash and sprinkle with coarse salt. Bake for 12-14 minutes, or until golden brown.

Serving:

Serve the warm beer cheese dip in a bowl surrounded by freshly baked soft pretzels. Invite guests to tear off pieces of pretzel and dip into the creamy, flavorful cheese, enjoying the combination of textures and tastes.
