Ingredients:

For the Burgers:

- 1 1/2 pounds ground beef (preferably 80/20 blend for juiciness)

- Salt and freshly ground black pepper

- 4 brioche buns, split and toasted

- 1 tablespoon olive oil

For the Caramelized Onions:

- 2 large onions, thinly sliced

- 2 tablespoons unsalted butter

- 1 teaspoon sugar

- 1/2 teaspoon salt

- 1/4 cup beef broth

- 1 tablespoon balsamic vinegar

For the Gruyère Cheese Topping:

- 8 slices Gruyère cheese

Additional:

- Dijon mustard or aioli for spreading on the buns (optional)

- Fresh thyme leaves for garnish (optional)

Instructions:

Caramelized Onions:

1. Cook the Onions:

   - In a large skillet over medium heat, melt the butter. Add the onions, sugar, and salt, stirring to combine.

   - Cook, stirring occasionally, until the onions are deeply caramelized and golden brown, about 30-40 minutes. If the onions begin to stick, add a splash of beef broth to deglaze the pan.

   - Stir in the balsamic vinegar and cook for an additional 2-3 minutes. Remove from heat and set aside.

Burgers:

1. Prepare the Patties:

   - Divide the ground beef into 4 equal portions and form into patties. Season both sides generously with salt and pepper.

2. Cook the Burgers:

   - Heat the olive oil in a grill pan or skillet over medium-high heat. Cook the patties to your preferred doneness, about 3-4 minutes per side for medium-rare.

   - In the last minute of cooking, top each patty with 2 slices of Gruyère cheese. Cover the pan to help the cheese melt.

Assembly:

- Spread Dijon mustard or aioli on the bottom halves of the toasted brioche buns, if using.

- Place a cheese-topped beef patty on each bun, followed by a generous helping of the caramelized onions.

- Garnish with fresh thyme leaves, if desired, then cap with the top halves of the buns.
