Beer Cheese and Bacon Stuffed Mushrooms

Ingredients:

24 large cremini or button mushrooms, stems removed and finely chopped (reserve caps)

8 slices of bacon, cooked until crispy and finely chopped

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 cup beer cheese spread (see recipe note below)

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped for garnish

Note: For a quick beer cheese spread, mix together 1/2 cup softened cream cheese, 1/2 cup grated sharp cheddar cheese, 2 tablespoons beer (preferably a light ale), a pinch of garlic powder, and a dash of mustard until smooth.

 

Instructions:

Prepare the Filling:

Cook Bacon and Vegetables:

Preheat your oven to 375°F (190°C). In a skillet, cook the bacon until crispy. Remove and set aside, leaving about 1 tablespoon of bacon fat in the skillet.

Add the olive oil to the skillet and sauté the onion, garlic, and chopped mushroom stems until soft and all the moisture has evaporated. Season with salt and pepper.

Mix Filling:

In a bowl, combine the cooked onion mixture, crispy bacon, beer cheese spread, breadcrumbs, and half of the Parmesan cheese. Stir until well combined. Taste and adjust seasoning as needed.

Stuff and Bake Mushrooms:
